                                                                                                Boiling time : 2 to 3 min




DOUGH  NUTS


Refind flour     : 1 kg

Salt                   : 25 gm

Sugar               : 150 gm  

Yeast                : 25 gm 

Fat or Butter  : 50 gm 

oil                    : 1 leater [for deep fry]




Method:-

Dissolve yeast in a warm water along with sugar. keep it aside for fermentation.


Sieve the flour add sugar and salt along with water mix it well.


 Finally add the fat to the mixture.


Make a smooth dough. 


keep it for fermentation 10to15 min.


Finally store the dough in fridge for 2-3 hours.


And cut the dough into 65gms pieces.


Shape and prove it.


Fry it just lower than smoking point for 7-8 min turn once while frying.

                                            Beaking temp  - 150c
                                                           Beaking time  - 45to1hour 
 FRUIT  CAKE


Maida                   : 250gm 

Eggs                      : 5 no's


Sugar                    : 250 gm


baking powder     : 2 tps  


Cherries                : 100 gm


Sultana                 : 100 gm 


Cashew nut          : 100 gm 


Candied peel       : 30 gm 


Ginger chips       : 30 gm

Caramel              : as required 


Fat                      : 250 gm






Method

Sieve the maida along baking powder.

Prepare the fruits.

Creame the fat along sugar.

Separate the egg.

Beat the egg white stiffiy.

After nately add egg,flour,fruits.

Bake at 150c for 45min or 1 hour.

PUFFS


Refind flour     : 500gm 

Fresh yeast       : 200 gm   2 tsp dry yeast

Sugar                : 11/2 tsp

Butter               :  25 gm 


Salt                   : to taste




METHOD 


Sieve the flour very well.

Mix the yeast and sugar in 1 tea cup of warm water and stir until the yeast dissolve add this liquid to the flour and make a soft dough for at least 6to7 min.

Mix the gee and salt very well add to the dough mix well . Keep the dough under a wet cloth for 20min there after knead for 1 minute.

Divide the dough into 20 small Pieces and shape into small balls roll out small puffs with the help of a little flour.
